The region where we live, the tastes and colors of childhood, tales of exile and journeys to the East, all of these things influence the style. From the wild woods to the sea, the colorful dishes reflect local flavors, which are basic and strong, sometimes to the point of bitterness, but also sweet tastes, heavy and rich, smelling of the earth. Short cooking times, combinations of organically grown vegetables and meats, cereals and tasty condiments, this is ‘cuisine du soleil’. Between this order and this imagination are the kitchen and the wine, expressions of the most beautiful resources of our soil.
“Creativity means originality.” This enthusiasm marks our cuisine, with a combination of a regional-based style, which has been our trademark, and a more avant-garde style that has Mediterranean roots. The menu changes with the seasons and includes a number of themes: the garden, the sea, the farm, the pasture, and our Technique-concept creativity certainly marks the most important difference between a cuisine that is merely creative and one that is constantly evolving. The extreme creative subtlety of the dishes of Bianca’s, their dialogue with the largest world, and the serenity of the atmosphere all contributes to create a single experiment “for all senses.”
